What is your go-to steak?

For some background. I like steak, but I'm a "connoisseur." For example, I find little added value to a $60 steakhouse chop than what I normally can cook on my own grill. So, when I got to the grocery, I usually look for what's on sale, and what doesn't look like it's just pure fat.
I figure, like all things, there's a happy median between ultra high end cuts, and Food Lion discount slop.
What should I target?

Usually have to ask the butcher for the hanger steak because there aren't many per cow. It's leaner like a filet. Delmonicos are generally fatty like a strip or ribeye.

Ribeye or filet for me
HC black or just SPG
Charcoal grill or pan sear & baste
Inside skirt (marinated) for tacos or quesadillas

Yes, they have ultra premium fake Murican wagyu stuff…don’t buy that. Ask the butcher what he’s got for the grill that is the best bang for the buck. It could be hanger steak, chuck eyes, strips, or any number of odd cuts. I guarantee the meat will be better and you won’t have to spend a fortune to get it.

Probably skirt steak, because that's what I eat the most. I eat filets at times as well, Pittsburgh style rare.
