My recipe....fwiw

Rub - 1.5 parts seasoned salt, 1 part rubbed sage, 1 part oregano. mix well and sprinkle ribs on both sides.

Double wrap ribs in aluminum foil, with the wrap ending with the edge on the inside of the ribs. Place ribs with the inside of ribs facing up on a smoker at 250. Smoke for 4 hours, with a pan of water beside them on the smoker for moisture. Unwrap ribs. Should be pulling up from the ends, but not falling apart tender. Then put the racks on the grill on low heat to brown them up a little and add your sauce.

You can replace the smoker part with an oven.
