Pay wings dry.
Season with some salt to pull out excess moisture.
Drop in hot oil for 10 minutes. Let them rest for a few minutes. Drop em back in for 6 minutes.
Coat with favorite want sauce.
Eat while laughing at Obed for smoking wings.

I ain't got time for cooking no wings. I spend all day at work so I can just give somebody a few simoleons to enjoy delicious deep fried wings on demand.
IMO, the only thing worth barbequing at home where it doesn't take too much of my time and comes out tasty is steak and burgers.

Taste good, but dries the meat. I cook’em indirectly on egg, about 350 til done, throw into big ### aluminum bowl with sauce, remove heat stone, throw back on egg direct heat for a few minutes to scorch the sauce a little, then serve with blue cheese because ranch sux.

Rub mine with my special stash of Home Team BBQ wing rub, smoke 1 1/2 hours, flash fry for two minutes. Sauce not needed.

put wangs in bowl put oil in bowl w/ wangs, rub around put salt, black pepper, cayenne pepper...rub around put baking powder in...rub around put on smoker until crispy
sawce heat sauce pan dice up jalapenos, habaneros, serranos - whatever put butter in sauce pan, put diced pepper in sauce pan saute for bit put bottle of texas pete (franks was too salty for me) put half stick of butter get to boil, then simmer
take sawce put into bowl take wings off grill and put into bowl toss
eat
#### fire later

when I smoked, I'd go 250ish for about 30-45, then crank heat up to crisp the skin
I'd prolly go 275-300 steady on a traeger type smoker b/c you'll get decent flavors out of that thing running it a little hotter than a std. smoker I think
rarely got the smoke flavor to make the effort worth it, imo
BEST way to do it is to smoke for 30 then throw into a fryer....but that's a lot of work. but it's amazeballs.

I smoke them kind of hot and fast. Cause wings can easily become acrid from too much smoke. At least that’s my experience.

I just do indirect heat on the Weber kettle for 45 minutes or so. Drop a wood chunk or chips on the coals. 19B® would advise that you flash fry them before serving for maximum crispness.
Also, you know what's harder than using a pellet smoker?
Telling your parents you Rollerblade.
