They released their depth chart listing DW4 as 4th string. They have not released him from the team.

Unlike MLB and the NBA where nearly all contracts are fully guaranteed, NFL contracts are typically not guaranteed which is why most contracts include large signing bonuses or other negotiated guarantees.
If the Texans release Watson, particularly if his contract includes a morals clause, he becomes a free agent and the Texans probably would not owe him anything, but they wouldn't get anything for him either.
Watson presumably still has trade value so I'd be a little surprised if they didn't take advantage of that as opposed to just letting him walk. On the other hand, maybe they did try and because of his legal troubles, that don't seem to have any end in sight, no other teams were interested.
