World's Best Clam Chowder

is probably what some will be looking for in Boston this weekend. In my opinion it ain't that foul white stuff they serve all over New England and it ain't the tomato-based stuff, either.
The best I ever had was in the '70s at a hole-in-the-wall restaurant near Emerald Isle Bech, NC - named "A & Francis". I'm sure it has long since closed. That was Eastern NC chowder and was clear - incredibly good and I wish I could find that style today.

That’s referred to as Hatteras or “Hat tras” style, best there is IMO.

In New England, the clear broth is called "Rhode Island" style. RIs poor, immigrant populations couldn't afford heavy cream, so, the chowder was made, virtually, the same (sans cream). If you are in RI, it is just chowder, but in MA and CT, its RI chowder. It's made with sauteed onions, salt pork, clam juice (garlic, clams, marsala wine) clams, potatoes, salt and pepper. Traditional versions dont have celery, bacon, or any herbs--that's reserved for restaurants/tourist traps. Best served with clam cakes, or clam fritters (if in CT), by breaking them up in the chowder.

Yes, indeed - that's the real deal..... RI or Hatteras, eastern NC - whatever. The authentic recipe used to have just a touch of grit in it also - likely beach sand from inside the fresh clam shells.
Man, I'd like to have a bowl of that now. Maybe I'll get some clams soon and try to make it.

I prefer the New England Chowder (no tomatoes) but the NE chowder can vary across the board.. I like mine thick and creamy and light on the potatoes. Some restaurants load it down with potatoes and it's more like potato soup. There used to be a place near Wilmington, NC that had good chowder and one in Providence, RI. I believe the place near Wilmington is now closed.

Boston’s Legal Seafood Clam chowder is OK, but there use to be a restaurant on the intercoastal waterway at Barefoot landing that was much better. Hate it went out of busimess.
