I'm going to feel like dog crap by, say, 9:45 based on throwing about 20 of them down the gullet. I love those things...Anybody got a great recipe?

One lb hot sausage (uncooked) One lb grated sharp cheddar (not the bagged crap) 2.5 cups bisquick 1/4 cup milk A little garlic power if you want
Mix by hand and roll into small balls
350 for 24 mins (don’t overcook)

Definitely don't overcook is a key. And don't do like I tried to once and pan fry. 🙃
But I agree, before you know it, you've eaten 2 or 3 dozen.

2 pro tips.
1) The sausage matters. You have to have some fat content to get the right texture. Our family sausage ball master swears by Wilson's.
2) There's no substitute for Bisquik. Don't even try to make them with a different baking mix.

Same recipe as posted above except, substitute Cheddar bay biscuit mix and pepper jack cheese. Could also add a dash of cayenne pepper

Thanks for the suggestion. I made some this morning, using jstone's recipe with a couple of small modifications. I added a little cayenne pepper since I only had plain sausage, and a scoop of cream cheese since I didn't quite have a pound of cheddar in the fridge. They look more like biscuits (I must have used too much milk not wanting them to be dry) but they still taste great. Made some fried potatoes and eggs to go with them.
