Here is how I make "real" cornbread --- I make the best in the world, taught by my Mom. It is very easy takes just 5 minutes. You cannot find this eating out.
Real cornbread has zero sugar and crap. You can add things like that when it is on your plate. Butter, honey, jams, and jelly - even sugar are to be added later on the plate. SOS gravy and bacon are good choices. A side of pinto beans and a glass of milk makes a tasty, healthy meal.
Don't improvise, follow this exactly. The perfect size is an 8" cast iron skillet. Pans don't work. Buy yourself a decent 8" Cast iron skillet. They are cheap on Amazon and last a lifetime. You don't even need to wash it after cooking, a quick rinse while hot is enough.
--- 2 cups of self rising cornmeal --- 1 egg --- 1&1/2 cup milk --- 1/4 cup olive oil
That is it !! Don't add anything else. If you use a premium cornmeal that is not self rising like the Palmetto add 2 teaspoons of baking powder.

Start the oven heating to 450 degrees with the cast iron skillet inside.
Dump your ingredients in a bowl and stir. Stir a lot. (I love my whisk.) After stiring, stir some more. You can't stir too much as this aint like biscuits. I don't know, but believe more stiring to be very important. Don't be in a hurry, have some fun. Hum a tune. I suspect as the oven heats up, time and stiring helps as to rising.
Take the now 450degree skillet out of the oven and spray some PAM in or some olive oil. Pour in your well stirred batter and set the timer for 21 minutes.
Don't over cook, don't use the eye test unless your eyes are calibrated. Take out and place on counter. The skillet is 450 degrees, the cornbread is 450degrees and still cooking in the middle. Don't dump as the middle is still cooking. Wait 10-15 minutes before dumping.
The result is great/real cornbread.

Don't know what Clemson Grits are but I had the grits with my steak at the Walhalla Steak House back in the '70-'71! I think it only cost $1.00!
I use stone ground grits with Half & Half-7 cups and Edisto Island tap water-3cups (when I have it) per 2 cups of grits. 5 cups of liquid if using H & H or real cream to 1 of grits. You can vary the ratio from 50-50 up to no water. Put about 2 cups of the liquid in a crock pot and turn on high. After it heats the liquid bring the rest of the liquid just to a boil in a pot. Be careful getting creamed liquid to a boil it will foam over. Stir in the grits and when they just start to boil again pour in the crock pot and stir well. Stir often and when they start to thicken turn to low and stir some more. Mash out any lumps on the side and stir back in. Cook till desired thickness, stir in a stick of butter and salt and pepper to taste.

Yes, no sugar. Although my wife from southern VA prefers it with sugar. Sigh.
I believe the best beans and cornbread are made with the tail end of your Christmas Smithfield Ham. Dang now I'm hungry.

Hoe Cakes indeed. Lawd I miss my MaMa. I cannot recreate her collards, fried okra, hoe cakes, or fried chicken. Pretty sure it’s due to lack of lard and bacon drippings but I am past my eat whatever you want days.

== diced jalapeno peppers and ground cannabis?? are not SC corn bread. Many might prefer coke or Mary Jane in their corn bread. Most folks like that could never cook real corn bread and are are not SC.

Sounds like a good cornbread recipe
Here's my Granny's Upstate South Carolina cornbread recipe. This is good for 2 people to eat two or so times. Note - no measurements are exact. The only consistent now is the cooking temperature since she cooked it in an old wood burning kitchen stove.
Preheat oven to 425 degrees
Mix
1 to 1-1/4 cup of self rising corn meal. Granny didn't have that so she added baking powder to the plain corn meal
2 or 3 overflowing tablespoons of melted bacon grease or fat back grease or vegatable oil
A dash or 2 or 3 of salt and pepper
2 small or medium eggs
Slowly add milk and stir. Keep slowly adding milk and stirring until it's like a medium thick milk shake with no lumps. I don't use a whisk but I love my Whiskey.
Grease the sides and bottom of a small (6 - 8 inch) cast iron fry pan with a thick coating of lard or crisco. No preheating the pan required. An old man's secret to putting crisco on the fry pan without making yourself messy. Fold up a paper towel into 8ths, dip the paper towel into the crisco can and spread it on the fry pan. Throw away the paper towel when done.
Pour the cornbread mixture into the pan and put it in the oven. Start checking it after about 16 to 18 minutes and cook until the top is light brown or how ever you like it. Let it cool, cut it and enjoy!

Good Lord have mercy an awesome post! But I think you’ve thrown down the gauntlet. I’d put my husband’s cornbread up against anyone and it wouldn’t be a fair fight. This sounds like it’s time for a cornbread cook off except he won’t give his recipe to anyone.

This is Alatigerfan's wife. Wait, this can't be your mother's recipe. This is MY mother's recipe. "> My husband and I agree it is great cornbread. I did learn something from your recipe. I put my oil in the pan as I initially heat the pan in the oven. Will try it your way next time. We also dump it sooner than you. Giving your way a try also.

I make decent cornbread, but my mother would somehow always get the edge crunchy without burning the rest of it. I miss crunchy edges. I have tried it preheating the skillet and without preheating. It baffles me.
Also I prefer lima beans slow cooked with ham to go with it, but pintos ain't bad either.

the pan and oil get both get screaming hot so that as you add the batter you basically fry the outside and get a good crispy crust along the edge and bottom. Throw in some cheddar cheese and jalapeños and you’ve got heaven in a cast iron pan. My wife and son both have celiac so we have to do gluten free, but mix half and half gluten free flour mix with good stone ground cornmeal and you can’t tell the difference.

My wife makes this exact same recipe, except she uses bacon grease instead of oil. Everything else the same, including heating the pan while preheating the oven. And 100% agree a good, seasoned cast iron pan is a must! Wonderful cornbread.

I cannot give you a ???? because you use olive oil and Pam, not bacon fat,grease, or lard. Otherwise, your momma is spot on about no sugar, jalpenos, etc. - well, except for cracklins, maybe….
