To each their own and I hope y’all enjoy…but neither for me thanks. Love bbq, but never been big on anything that consists of ground up organs. My grandparents always had souse meat too…and proud to say I never tried that either.
As for stews…have never really been much for stews or soups…especially anything tomato-based…can’t tolerate it.

Well…maybe I don’t…I’ve always heard of it and looked up a recipe (from someone in SC) and it consisted of ground liver, heart, etc. If it’s not, then maybe I’ll give it a go…but the hash I saw in Florence was pretty runny and looked like a bunch of ground up stuff.

While farmers back in the day looking to use the whole hog would indeed use organs for making hash, I’d wager that the vast majority of any hash you buy from a bbq restaurant today is made from Boston Butt - the same meat they are making their pulled pork out of. It just doesn’t make sense to spend the extra time preparing organ meat for the hash when they can simply use some of the meat they were already preparing anyway. Plus, restaurants tend to want to provide a consistent product, and it would be harder to consistently have the exact same organ combination in your hash to make sure it tasted the same day to day. Personally, I don’t care what part of the hog goes into hash… organs are meat too and are not necessarily any “ickier” than a piece of animal leg/rib/etc. if prepared properly!

Love a good Brunswick Stew. Living in Upstate SC, I'd honestly choose hash if given a choice, but only because it's hard to find hash in restaurants around Clemson. I often make my own hash and also Brunswick stew because I have great recipes handed down from my family which are better than what I can buy locally in a restaurant.
