Expanding the idea in the post below referencing that poster's fav class at clemson, I think it would be interesting to hear everyone's...
For me it was "The social construct of madness" which was a psych honors seminar. Amazing class and professor that taught me a good bit that benefited me highly in my career and med school.
Anyone else wanna chime in?

I would say graduate-level modern art and architectural history. The professor actually had met most of the people in the course, wish I could remember his name, cool cat.
the worst was professor childres and his undergrad intro to film, he would show a slightly ghey pornographic movie every year, and tell some BS story about a ouji board. it was the only reason people took class, but he was just there to pick up dudes at backstreets.

I don't know how old you might be, but this sounds like my professor, Hal Coolidge, who taught Art and Architectural History in the College of Architecture when I was there in the mid-70's. One day in class he was talking about the architect, Louis Kahn (truly one of the greats in 20th cent. arch.), and how well he knew him, etc., when one of our classmates mentioned under his breath during a pause in the lecture that "he's dead".... Hal stops and slaps his forehead, saying "oh no... Lou is dead?!", like a good buddy would have never known...? One of those, "you'd have to be there" moments, but we all almost fell on the floor laughing, as kids will do.
My favorite course at Clemson, however, was a building science class - "Steel" - taught by a guy named Norman Book. He was a relentless maniac on class, testing and course work. Or maybe it was Shakespeare 405....? I was a double major in Architecture and English, and ultimately chose Architecture over serving coffee in a Starbucks for a profession.

Speech with Eddie Smith, Social Psych with Dr. Hallahan, and history of Clemson with Dr. Reel. Also loved business law with Virginia Ward and marketing 301 with James Gaubert.

Can't remember the name of the course, but it taught an early version of CNC programming and shop equipment such as shapers, lathes, mills, etc.
The teachers "real" name I cannot remember, but on the first day he told the class to call him "Reb". He said it's short for Rebel. He told us a Yankee is anyone who lived south of Pelzer or north of Walhalla.

Anything taught by Mr. Hodges in Art & Architectural History. I took every course he offered. Close 2nd would be the steel taught be Dr. Book. Architecture students would be working on their steel homework at 3 am with a design project due the next day because you never, never, never wanted to be unprepared in Dr. Book's class. He was a genius at keeping architecture students engaged in a course we really didn't want to be taking. He was a showman who understood the power of fear!

(See my late post, above, regarding Norman Book...) Suit and bow tie every day in class, short trim hair, and drool running down his chin as he shouted over and over again, slamming his fist on the table top, shouting "Stress! - Force over an Area! Stress - Force over an area! Stress - Force over an area!" He kept this up for about 15 mins. one day and we looked at each other wondering if we should call the white coats to take him away. He was actually a wonderful professor, but strict and demanding doesn't even begin to qualify this guy's approach to teaching his course. I took Concrete under him as well....
And "Uncle Vernie" (Vernon Hodges), was the most intelligent man I've ever known in my life. Ever. With the wryest sense of humor any man ever possessed. I think of him and his intelligent witticisms every day. I attended his funereal in 1980.

400 level Econ course taught by McCormick. I remember so many of the lessons. What’s the best price to charge for Clemson football tix? Should Clemson parking issue more tix at a lower cost, or select one day a year where the tix cost $500+? How competitive sperm is like a football team swimming towards the egg.
One that sticks out is ‘why the Cubs will never win the world series’. No profit motivation as they’re always sold out, have a good tv contract and tons of merchandise. When they finally won 20 years later, the professor and I had a nice email exchange.

Probably my course on C Language Programming. It was a lab class taught by a GA rather than a professor, but he was really good at explaining the material.
Another one I still remember for some reason is the class on Symbolic Logic I took as a first semester freshman. It was technically a Philosophy class, but Symbolic Logic is more like doing a mathematical proof. I think almost everyone else in the class was a Junior because it was a 300-level course.

M.C.Bell, 106 calculus my freshman year and Dr. Louis Henry, Advanced Composition(English) my junior year were my favorites. "Coach" Couch in Industrial Engineering classes was good as well....

Social Construction - good, I am a social constructionist.
I would say "991" PhD Dissertation. Especially that 1 credit I had to technically take just to remain enrolled while I churned it out. I had something like 50 or so credits in that one "course". Basically you take that to remain enrolled after you finished your other coursework (yes you run OUT of classes to take and still take 50 or some classes after that.
990 would be directed studies which was whatever your Dissertation chair wanted to take. I have a few of those. Think about it as non-independent studies.
Otherwise, Empirical Research Methods in the RCID program was fun, as well as Buyer Behavior in the marketing program.

I'd have to say Experimental Surgery in the BIOE department; learned a ton, and it really served me well when interviewing. I seriously doubt they offer anything like that now though.
Very honorable mention: anything Dr Huey taught. He was amazing!
