I looked at a lot of them, and a lot were just not put together to last. This is a 'lifetime' grill/smoker. They are Very heavy , that's why I was able to get this one. The guy got tired of trying to load it on his trailer and take it to friends and neighbors.
It's 1/4 inch plate and will hold the temperature very well once it's there. I'm finding , like all things - practice makes perfect (and I'm still practicing). You can control the temp within 5 degrees by just the slightest chimney opening adjustment.
My only alteration to it so far was to remove the Kentucky Wildcats emblem on the woodbox and replace it with something more appropriate for 'smoking chickens' .

I would recommend a Weber Smokey Mountain. Very good little smoker, lots of info / recommendations online about using them and setting them up, and plenty of aftermarket upgrades you can buy for them.
Just not quite the "All-in" variety seen here.

I won't ever own a gas grill. I have a weber grill and I smoke with it all the time. Indirect cooking with wood chips for a couple hours will give all the smoke flavor you want or need. I smoke with apple wood, sometimes cherry or a combo.

I got a Kamado Joe about a month ago and I could not be happier. The ability to control temps for low and slow is incredible, and the moisture retention from the ceramic is outrageous. Plus I can crank it up to 800 to sear steaks easily. Perfect for me and my family.

That's awesome. I love smoking all sorts of meat. I've been on the pork rib kick here lately. Trying different things to perfect ribs to my liking. One day I'm gonna buy a welder and try and build my own smoker. Just send me your address and I can come by and taste test your food and give you an honest opinion on it. Not for my sake of course, but only to help you out.
