for me to cook today . . . Supper could be white chili w/ Monterey Cheese, beef chili with homemade coleslaw and cornbread or it could be as simple as an egg salad sandwich with chips . . . Only my bride knows what I’ll fix for her under these conditions . . .

Ten days ago, I started a plan to cut back significantly on eating meat and poultry. Tonight's supper is a meatless taco bowl with pinto beans, dairy-free cheese, dairy-free sour cream, salsa, and guacamole. I left the tortilla chips out to reduce carb intake.

a ham sandwich or some pulled pork or at least some bacon. I live about a mile from Henry's Smokehouse here in Simpsonville and visit often for Hog plate or a regular sandwich plate with mild sauce and slaw on the sandwich and my fave sides of baked beans and potato salad and a sweet tea. My son BigAl likes the beans and sweet potatoes. Good eats.
