Can someone briefly explain the physics of knife sharpening?

I've been dragging these blades up against grindstones for years and I still don't understand why it works...
Isn't the method for sharpening a non-serrated blame the same as the method for dulling a non-serrated blade?

I'm just saying that the same friction used to sharpen the knife is the same used to create its dullness, no?
For example, Buck recommends shaving forward against the grain. I'm just saying, if I wanted to dull a knife, would I do the same thing?
Is the "moderation" of the motion more important than the motion itself?
