Tried something different. Most butts I've smoked I've trimmed only a little fat off, or none. This one I trimmed almost all of the fat. Dropped an 11lb butt to probably 9.5 to 10lbs.

Just wrapped it (7am) at the stall (158) and the bark was amazing. Wrapped in butcher paper with most of a stick of butter, honey, and turbanado sugar. If this thing stays moist with that bark it will be a winner. Will see. I may be a convert to cutting most fat off.
