Mentalists use forced outcomes, they predetermine the outcome of the trick, and give you the illusion that you have control over the outcome, sometimes it is slight of hand, or just simple math.
Look it up on YouTube, I found it fascinating, the tricks are ridiculously simple. David Blaine is a fun one to watch, most of his tricks have been debunked.

He guess the players the others were thinking about and guessed Kenny Smith's bank pin. He also put his prediction for the Final Four and the winner of it all and put it in a sealed envelope to be opened later. Things like that.
