every restaurant charges $20+ for anything Birria.
Local place also serves this. My son LOVES it.
Birria Ramen: homemade noodles / boneless short ribs / consommé broth / red onions / cilantro / homemade corn tortillas. 19
Daughter and I both get the Quesabirria Tacos: three boneless short rib barbacoa tacos / chihuahua cheese tortilla / onions / cilantro / charro beans / housemade consommé (broth) for dipping.
Yes, $19 for a bowl of Ramen. Price for tacos isn't listed, I think they are $20ish.
The restaurant is in like an old Ruby Tuesdays, looks meh from the outside, but the inside is NICE. Been twice, once on accident thinking it would be quick and cheap mexican, and once to celebrate birthdays.

They were good, but not $16 good (plus tip, because why shouldn't you tip 20% at a food truck).
Birria is actually not hard to make--maybe 25% more effort than throwing a roast in a crockpot because you have to toast and reconstitute some dried chiles and blend 'em up. I haven't tried a crockpot recipe yet but probably just as good as browning/braising in a dutch oven. Feed your whole fam several times for whatever a hunk of cow and a few other ingredients costs.

Pay attention to the liquid/broth/consomme part.

I've only made them once, and ended up with basically no broth/consomme to dip them in, or to dunk tortillas in before throwing on a flat top. I shoulda added water or beef stock or something midway through, but didn't realize it because never made them before.
