What is on the menu for the game tomorrow?

We started having chicken wings the first year Dabo was name coach. It worked well so far so we are having chicken wings in honor of the fighting Gamecocks. I will toast them a bone or two.

Since 1976 all game day menu's have been KFC Fried Chicken, Potato Salad, Cole Slaw & Cold Beer.

Bojangles fried chicken and pimento cheese sandwiches with bloody marys have worked at our tailgates for years now. Should the tigers happen to fall behind, we eat another pimento cheese and drink another bloody mary...and the orange is in the end zone before you know it.....

--smoked jalapeno poppers
--St. Louis style pork ribs
--grilled chicken wings

Need to sequence them throughout the day.

Also, Yuengling lager.

That sounds really good. You know 20 yrs ago you could only get Yuengling in Pa. I went to a wedding in Pa. in 2002 and was the first time I had one. It was the only thing on tap. We went to NYC to see where the Twin towers stood. I saw all the picture of the missing people, awful. It was not long before Yuengling was ever where. I saw some in Myrtle Beach the next year. My parents how a house in MB back then.

than a Lowcountry chicken bog. To me a bog is always on the mushy side whereas chicken and rice is less so. But to each his own!

This Lowcounty chicken bog uses an instant pot which is great with a generator and tailgating! Or, you can make it at home & reheat for tailgate!

CHICKEN BOG INSTANT POT - TAILGATE

This version makes about 8 servings. Great for a colder November tailgate, especially the Gamecock game!

* 1 1/2 lbs boneless, skinless chicken thighs, cut into cubes
* 1 to 2 Tbs Olive Oil**
* 1 onion chopped
* 1 Tbs minced garlic
* 1 tsp smoked paprika
* 1/2 tsp Kosher salt
* 1 tsp Seasoned Salt (e.g., Lawry’s)
* 1/2 tsp freshly ground pepper
* 4 tsp of unsalted butter**
* 1 14-16 oz package of smoked sausage (I use Carolina Pride out of Greenwood) sliced
* 3 cups (24oz) fat-free chicken broth (optional you can use low-sodium)
* 1 1/2 cups long grain white rice (do not rinse)

DIRECTIONS
Set the Instant Pot to Sauté. Add 2 Tbs Olive Oil. [**Note: if you prefer, you can use 1 Tbs oil plus butter. Using butter adds 50 calories and 5.5 grams of fat per serving.]

When the oil is hot, add garlic and onion. Just as the onion becomes translucent (but not browned), add chicken. Cook chicken for about 4 minutes, while adding the spices and stirring occasionally.

Add sliced sausage and cook for 1 more minute. Turn off the Instant Pot. Add chicken broth and rice, stirring lightly (just enough to ensure the rice is completely covered by liquid). Install the lid and turn the vent to sealed. Push the Manual setting, ensure the pressure is on High, and set for 10 minutes. Once complete, allow to vent naturally for 10 minutes and then use Quick Release.

Stir then set for 5 minutes before serving.

Some notes: If you’ve never had Chicken Bog, you may be surprised by the somewhat “mushy” texture of the rice. Don’t worry, you didn’t do anything wrong when it turns out that way. That being said, if you don’t like the texture, you can always decrease the liquid by 1/4 cup and use the Rice setting, instead… but know that you’ll be making Chicken and Rice, not Chicken Bog, and everyone from the Low Country of South Carolina will know it!

Zxsam, also good to know. Actually I always assume chicken bog is supposed to be mushy so that’s what I’m going for. Hope it turns out that way.

Just injected a pork shoulder/boston butt, seasoned and wrapped it-- tossing it in at 6am for a 10-12 hour smoke at 180...pulled pork Smokin' Pig style :)

It’s going to be bone in ribeye and bacon wrapped scallops.

The trick is to put a light sear on the scallops before you wrap them with bacon and throw them on the grill.

Clemson tailgating. It’s a beautiful thing. This thread made me hungry. We should all get together in some sort of peaceful gathering... since tailgating is outlawed we will have to call it the tigernet social
