Any of you do the real hardwood smoked BBQ for Thanksgiving

and I don't mean pellets. I mean over coals, real man BBQ.
What's your process?
I usually do 2 hours unwrapped over pecan for that good hard smoke. Then wrap in foil and let it go until it plateaus. Then unwrap until 210. Let rest for a few hours. Then sprinkle Tailgater Hater sauce on it and put it in the oven for a few minutes to heat up and cook in.
This is boston butts by the way, not whole hog.
