I just read all of the statements, and it's pretty clear what Watson's defense is going to be as most of the statements sound very similar.
Basically all of the statements say that Watson was very professional, friendly, polite, quiet, and mostly kept to himself - often listening to music. They all say that he asked for work on his abs, hamstring, glutes, and groin areas, which is normal for athletes. Many also say that his showing up in a towel is not out of the ordinary for athletes.
There's also also a theme among them that state the therapist is in charge, and as one therapist, Norma Reyna, put it " If a therapist feels uncomfortable at any time during the session, he or she has the ability to end the session and immediately file a complaint with the Texas Department of Licensing and Regulations and vice versa. You don't get a lawyer and file a lawsuit or go to the news media. You file a complaint immediately."
It's pretty clear that Watson and his team are going to claim that he goes to massages often because he's an athlete who often has sore muscles, and he prefers to keep to himself during the appointments. He will claim that because of his fame and celebrity he often has masseuses that will come on to him, and he'll admit that he sometimes allows the women to provide him with sexual favors, even though he doesn't ask for it. The defense will also be that Watson had no control over the women - the therapists are in control - and any actions they took were of their own accord.
If Buzbee is going to win these cases, he's going to need a lot more evidence than he's shown thus far. That's not to say that he doesn't have it, but it's interesting that he promised to show more texts to the general public (so far there's only been one text released), and he promised to provide evidence to the Houston Police Department by Monday March 22 (that was pushed back, and now it is no longer happening at all). In a recent suit he also stated that Watson is "deleting Instagram messages". These broken promises, changed stances, and excuses sound a lot like he may not have all that much evidence outside of the testimony of the women.
With that said, I think settling is still by far the most likely outcome. Deshaun is heavily incentivized to get this wrapped up fairly quickly because he has a deadline in the form of an NFL schedule. My guess is they come to some sort of agreement where Watson admits to having consensual sexual relations with the massage therapists, and, in exchange for a sum of money, they agree to sign NDAs.

100% this. If nothing else it's the sheer number of different masseuses that will raise a speculative eye. I'm not sure about the settlement though since Deshaun seems set on clearing his name
