Are you going to make it so complicated and specialized and niche driven that even cooking a bubba burger for lunch becomes an entire process that involves a Big Green Egg, a Traeger pellet grill, a brick pizza oven and about 15 European condiments to get the "aura" and "natural meat flavors to emanate from the bun"?

Instead of a Bubba burger, may I suggest:
Pull out your grinder attachment for the stand mixer and make up a home-ground blend of 25% short rib, 25% sirloin, and 50% rib cap with a good heaping handful of homemade cured and smoked bacon. Season with black peppercorns freshly ground in your mortar and pestle, and Korean bamboo salt. Get the cast iron griddle pan for your Kamado preheated over a full fire box of KJ Big Block hardwood charcoals, and wipe it down with a little Ghee, then make them smash-burger style and top with slices of some smoked Gouda. Serve on home made brioche buns from earlier that day. Top with some hot garlic dill pickles from your larder, some fried shallots, a slice of heirloom tomato from the garden, and whip up a quick garlic aioli.

gray before putting them in the BGE. Get a good coal bed going and it should be mostly heat with next to no smoke.

But I now have the old trailer one the team used to use. It needs some work, mainly a plate welded to the bottom, which I don't have the skills to do. It's just sitting in the back yard right now.
Eventually going to try to get that thing hauled into a shop and may just pay someone to really trick it out.
