Trained taste panels are serious business requirements. I trained and qualified for two over my career. It is not easy by any means especially when determining individual thresholds for various taste attributes .

I'm very disgruntled that we didn't place in the highly competitive "ice cream" category. I used to dip ice cream at the old P&A building ice cream bar. Made $1.25 per hour which was minimum pay but got to take home free chocolate sundaes for dinner to our little prefab across the street. Wish I could go back!

When did you live in the prefabs? I lived there as a freshman in 1980 which was the last year the group near P&A was open. I would have lived there all 4 years if I could. I worked in the dairy plant in Newman in 82 and 83 and was a member of the dairy products judging team in 82-83 school year. Worked for 35 years in the dairy industry and now work with these students in the Food Science program. Wonderful group of kids and Sara is a great coach. They still make the ice cream in Newman and sell it at the 55 Exchange in the Hendrix Center. One of the great Clemson Traditions.

My husband and I lived in the prefabs 1966-67. We were in the very first one on jersey lane, right across from the P&A. They were building the new library and we had a perfect view of that. We could leave our car at home and walk to football games. Awesome memories!

Nope. These students like Katie use the experience gained to go out and get jobs in the industry. Worked for me almost 40 years ago and still working for these kids.

It was a real course. Dairy Science 101.
" Dairy foods such as ice cream, yogurt and various cheese; the use of these foods for nutrition and pleasure. Sampling of various products will take place place throughout the course."
Easiest A I ever made.

Yes it was a real course. A very basic introductory course for those who were going on to a career in food science. Most people have no idea what goes into producing safe, high quality food that also tastes great. For most, it just magically appears on the store shelf.

I can say with absolute 100% certainty that “dairy tasters” is in fact a real job within the dairy industry.

I can also say with 100% certainty that dairy tastes are regional or even local. The best seller in Chicago would go bankrupt in Atlanta. There are exceptions…..but that’s what dairy experts say.

If you ever wondered……the greatest chocolate milk in the world, comes from Shreveport……truly, no contest.

I’ve been in the dairy industry for 40 years. Unfortunately the consolidation within the industry has greatly reduced the “local” and regional differences especially in fluid milk products but there are still some independents who make exceptional products. Who makes the chocolate milk in Shreveport that you like? Morell's?

The one I had was Foremost. They might’ve been HQ’s in Houston, but the first time I ever tried it was in Shreveport.

I know some about the consolidation. I was at DeanFoods. There were some good people there. There were also some Satans incarnate.

They moved me all around. I was a plant manager most of that time. Miami twice, St. Thomas, Erie PA twice, Akron. Then a regional job covering Maine to Miami. I started when Howard Dean was still involved and they had 45 plants. When I left I think there was about 115. Too big for their own good.

Even in 02 it was being run by dairy men. Somewhere around 05 it began being run by Lawyers & Accountants. They made sure they were payed obscene money…..and they destroyed the company to do it.

I knew Alan when he was at Garelick in MA. I reported to Brad Holcomb in Dallas during that time. Worked a lot with a guy named David Pavao that you might know. It was a great company to work for in the 90s. After Suiza bought Dean in 2000 it just got too big and was like working for the government. What was your role while there?
