Got a couple questions for ya, since you are a local, or for others that have been there, done that.
We've been twice before, once when daughter was 4 months old (she is 14 now) and once about 2-3 years ago. BUT, we have never been up on the Jackson Hole Tram to eat Waffles at Corbett's and do some hiking up there. Is that worth it? $145 for a Tram Pass, which is pricey as hellll, but better than $50/pp which is what I thought it was last time and why we didn't go.
Also, Lamar Valley Loop in GTNP is a must, it was closed when we last went, right after the floods.
Friends taking us down the river in GTNP, last time we floated Snake River south (?) of Hoback with them, going in the park this time.
Biking the path from Jackson to Dornan's most likely, we did that last time and it was fun.
Staying in Moose, IIRC, which will be new for me. We have stayed in Jackson both times. Stillwest Brewery was nice last time, right there looking at Snow King.
Anyways, 2 days in Jackson, 2 Days in GTNP, 2 Days in Yellowstone.
Any suggestions for other stuff I cannot miss out on?

The bull riding was about 5 minutes of the 2-3 hour ordeal.
Was not worth it.

It was perfectly average as far as sights go, and I was a kid at the time, so it's probably even further down the list of sights I've seen now.

Is Wilson. A store/gas station called Basecamp has some marvelous BBQ sandwiches and other food. If you get that way do wreckormend. Ain't nothing out there cheap! But it were good. I have a fishing spot in the area and usually drop by for the sammich when doing my western loop.

Kicked my butt on the way down. Should have done that run first day early.
In Summer they run one of the other gondolas that goes up to a little plateau. It is a lot cheaper. I'd go up to corbits though. Might be expensive, but you might never get the chance to do it again.

Ive never done the tram or eaten the waffles so cant comment on that. I assume its a great experience. Floating the Snake is always a fun time. Pretty mellow. Your Jackson agenda is something I'd put together. Maybe see if you can leave on a bike ride from Dornans and bike along the park road instead of that highway from Jackson. I dont remember the bike trail system all to well so double check that may be an option.
Jackson and Moose are like 20 minutes a part, same vibes, similar demographics. There's really no reason you cant go do stuff in downtown while staying in Moose. I love rodeos. I think all the events are fascinating and worth seeing.
On the things you cant miss part--both GTNP and Yellowstone are incredible always. I think the thermal features in Yellowstone can be skipped or quick pit stops. Old faithful is cool, but you may end up waiting like an hour for the thing to erupt. The rest of the OF geyser basin is cool to walk around in the mean time. No need to see Norris and Old Faithful and West Thumb. One is cool, then brief stops at others.
The thing people miss on is time in the park. You're there during the longest days of the year. Most of my memorable experiences here were just as a result of making the effort to be out. For example, last week I went out after dinner, ###### up my toddler's bed time routine, and we saw a black bear chase off two grizzlies. It paid off. Maximize the days, up early and out late, and you'll have a cool wildlife encounter, a memorable sunset, etc.
Plan for long travel days in Yellowstone, its big and there's a lot of car time. Lamar is a haul from Moose--like 6 hours id bet. You'll see a lot on that route. Are you staying in Gardiner or Cooke City or in Yellowstone for that night? The drive is spectacular, all along the tetons to start, then hit West Thumb geyser basin for 15 minutes to stretch the legs. Drive along the Lake. Stop at Canyon to see the Canyon. Head over Dunraven pass, then stop at tower falls for a quick easy walk out to a waterfall.
From Tower to Lamar, if you see a bunch of people with scopes at Slough Creek, they're looking at a wolf den. If the wolves are out, I bet you can ask someone to look through their scope. I always let people look through mine. Lamar is the best spot for wildlife, followed by the Tower area and Hayden Valley, both of which you'll pass through on the route I described. Same thing with the crowds and scopes at all those places. Wildlife is most active in the morning and evenings. You'll see loads of bison all day. If you want more mountains, head over to Cooke City--20-30ish minutes from Lamar. Not much going on in the town, but its very pretty.

are truly staying in Moose the whole time. Looks like it might be 3.5-4 hours from Moose to Lamar Valley through Southern Entrance. It's certainly going to be a haul, lots of car time that day. And there is still the option to snag a hotel and just keep the place in Moose, logistics to still be worked out.
We have done most of the thermal stuff, got really lucky and say OF a couple times, once at sunset with about 30 other people around. Grand Prismatic is great too, but done that as well.
