For the older servers, it doesn't matter...you can still order it how you want. But the young servers can't handle it when you stray from the standard order.
It's a common chain restaurant problem from the COVID era. They all dumbed-down their menus and haven't gone back.

I do the all star and tell them to hold the waffle until I'm ready. Then if Im not feeling the waffle after my hash browns and eggs I just say leave the waffle off and change the ticket to a two egg breakfast and save $2.

I'll do the grits every once in a while. But I like my eggs over medium and bust the yolks and mix them up good with the hash browns like I do the grits. It's delicious. Waffle house grits seems to always have those giant clumps in them.

I always get the All-Star with hash browns. I’ve never flipped to the other side. Apparently it is filled with bubble screens and advice about kicking PAT’s when down by 13 with 6 minutes to play.

Breakfast: cheesesteak/fiesta omelet ....side of tomatos, side of texas toast, chicken egg n cheese biscuit, pecan waffle, water chocolate milk to drink oh and dont forget triple hashbrown scattered smothered covered diced pickled
Dinner: sirloin dinner, scatter smothered covered diced double hashbrown, texas toast, grits, water, sweet tea and triple chocolate pie

Whatever your favorite side of the Waffle House Menu is, do NOT attempt to add something spicy to the menu. No way Jose!! Coach gets mad as a hornet when those bells and sirens go off with the fireworks. It totally upsets his inner rhythm and mental focus. The 2 opening bombs against AppST which immediately blew open the ballgame, melted the edges of his menu he had stuffed inside his belt and almost caused permanent jewel damage. Luckily he was able to whip it out, give it a Gatorade bath and get back to the WR screens and dive plays, before anyone else could try to stretch the field and set off those annoying firecrackers.

You can also go off the main menu with an omelet, or omelet plate if you still want the hashbrowns, meat, and bread. Ask them to cook the omelet traditional (on the grill).
Is it bad that I was more excited to respond to a Waffle House post, than one about our football performance?

Haven’t eaten at the awful waffle in years. I had a roommate that worked there and the smell of him after work filled the entire house. Still makes me nauseous to smell lomelt today! My go to was always breakfast. Eggs and cheese with raisin toast and apple butter.
