#### smokers. People think smoke should be present through the entire cook. No. When you open coal cook you start off with a hard smoke to impart a little flavor in the meat. Then you use coals for heat (hot coals don't smoke much).
Now people think you should be rolling smoke for 4 hours for a chuck roast.
