Setup a local excursion to take a speed boat to the Blue Cave to swim and a couple of other stops.

Montenegro is surprisingly good. Kotor is great. Make sure you get a boat tour to the islands in the middle that have the churches.
Don’t set your expectations too high for Albania. And expect driving there to be pretty brutal with few highways leading to heavy traffic.
A boat around Corfu is a good choice. There’s one that takes you around and has a picnic on the beach.
