I always dry brine my butts so did that the night before.

Put it on around 6 am at 225, after about 4 hours started dousing with Apple Cider Vinegar about every hour - around 2 pm both butts were in the 175 range, so I put them in a pan, with some more vinegar sugar mixture and sealed them, upped the smoker to 275 and took about 2 hours to hit 203.

Pulled them off and put in oven still in the pans for about an hour and an half before I pulled them (basically just taking out the bone and a little extra fat.

I have one back in the smoker warming up now along with the ribs that are finishing up.

You ever toss them in a cooler wrapped in foil and a towel for a couple hours? It’s a total game changer, the longer you wait the better they seem to be too. I suppose the hot box accomplishes the same end.

I just let it cool naturally, pulled out the bone and put it away until today.

It will come out of the cooler amazingingly hot when you do that. - I usually wrap it in foil, then old towels then in the cooler (warmer?).
