Best butt rub?

You half-wit comedians can answer the question too.

One thing about this rub is there is no salt in it

Sep 9, 2022, 1:13 PM [ in reply to I use Meathead's Memhpis dust ]

I salt everything before, butts and briskets overnight, this usually draws out enough moisture that you don't have to use a binder, like mustard. If I do use a binder its usually olive oil or vegetable oil. If you salt before look to see if a premixed rub has salt in it.

what are you into ?

Sep 9, 2022, 1:22 PM

standard is :
- brown sugar. I like granular because u can rub it harder into the meats. some like the powder because it gives a more even coat of bark.

- some sort of salt... i use seasoning salt

after those 2 ingredients it is all on what you like. add whatever spices you want.. i use whatever i have in the cabinet at the time.
I used Tony Chachere's Creole one time.. came out pretty good.
https://www.walmart.com/ip/Tony-Chachere-s-Seasoning-Cajun-Original-17-oz/10313896?wmlspartner=wlpa&selectedSellerId=0&wl13=640&adid=2222222227710313896_117755028669_12420145346&wmlspartner=wmtlabs&wl0=&wl1=g&wl2=c&wl3=501107745824&wl4=pla-294505072980&wl5=9010604&wl6=&wl7=&wl8=&wl9=pla&wl10=8175035&wl11=local&wl12=10313896&wl13=640&veh=sem_LIA&gclid=EAIaIQobChMIwrm2upuI-gIVn3xvBB1QEQc2EAQYAyABEgJHqPD_BwE&gclsrc=aw.ds

Another time i had some Coaches low country boil (which is the best low country boil mix IMO) mix leftover so i used that. It also came out pretty good, a bit too spicy for my taste but every 1 else like it..
https://www.facebook.com/coachslowcountrybrand

HOw you cook it is way more important. To me the tenderness and moisture are the more critical things to worry about so I highly recommend the texas crutch. BBQ sauce should only be used for flavor..you shouldn't need it to mask some hard, dry butt.

Re: Need advice from all you smokers…….

Sep 9, 2022, 5:50 PM

If you want it to look like the pro’s when it is done, pack the rub on there at least 24 hrs before you smoke it. On a Boston butt, try to maintain 250° in the smoker until your internal temp is between 196° - 198°

Putting the rub on way in advance is how you get a good bark. Without doing that, most of the rub will roll off with the grease.

Move the butt into a tray (like a Turkey tray) for the last 3-4 hours it is on so that when you pull it apart you can mix some of the juice back into it and you won’t have any dry pieces. You don’t want to put it in the tray too early or you will have A TON of grease In it.

oven, it's not taking any more smoke anyway. That way it won't dry out. You must wait until the internal temperature is at least 190 and more like 195-200. That is a must to get real pulled pork. That's why I wrap the last few hours, I want to make sure I wait long enough.

What time is dinner? I don't know, but it's not coming off early! I try to give myself 12 hours but it's usually about 10.

Always let it rest a good 30 minutes too.
