I made fresh Pasta Carbonara tonight with a Caprese salad.

Rendered some pancetta, whist doing so I grated some Parmeasano-Reggino and Pecorino-Romano. Mixed the cheese with 4 egg yolks and 1 whole egg. Bloomed some fresh cracked pepper with the pancetta drippings and added that tot the egg/cheese mixture.

Caprese was an heirloom tomato slice, buffalo mozzerella, basil, balsamic and EVOO. S&P, of course to taste.

Cooked some fresh linguini, tempered the egg mixture with some pasta liquid, stirred and tossed the pasta along with some sweet peas and spinich in the sauce.

Served with some incredible EVOO from Tuscany and Italian bread.

Nice Tuscan Sangiovesse.

Current state - stuffed.

Imma tap a nap now to get ready for bed.
