I gave a good shot at chicken piccata tonight. The wife can’t get it anymore at her favorite Italian place bc they discontinued using angel hair pasta.
Never made it before but it turned out really good. It’s basically flour dredged thin chicken sautéed in butter and olive oil. Then the sauce is made w more butter, lemon juice, lemon zest, chicken stock, capers, minced garlic. Served w pasta.

salmon seasoned w/ italian seasoning, sauce was roasted cherry tomatos w/ garlic, olive oil, lemon zest, lemon juice, capers, red pepper flakes, fresh basil. Added some baby spinach to pasta water to wilt. Over the top added more fresh basil, fresh grated parmesan.
