You talking yellow sauce. You put mustard base on my ribs and I’m walking away. Yellow only goes on pulled pork. That’s just me.....well and many others. There’s a reason why you never see pics of yellow sauce on ribs....like ever.

Amazing Ribs Memphis Dust

Jul 21, 2020, 6:25 PM

https://amazingribs.com/tested-recipes/spice-rubs-and-pastes/meatheads-memphis-dust-rub-recipe

I leave out the rosemary bc im not a big fan of it. I’ve used it several times on ribs, pork butts, and even pork chops on the grill. Finish them off with some Sweet Baby Rays. ??

flag link military_tech thumb_downthumb_up

^^This 100%^^

Jul 21, 2020, 7:36 PM

The rub is just gives it a mild taste. Then you finish with the sauce that you like, which for me is KC Masterpiece.

But, I've been on the keto diet for a while, so I substitute erythritol for the sugar in the rub, and use a sugar free BBQ sauce from Walmart. Really great, and very low carb.

Cook the ribs 5.5 hours @ 225F on the smoker, and they're perfect.

Be sure to salt them first, though, before you put the rub on.

This is like asking people their favorite candy. You’ll get 1000 different answers. The last 5 or 6 yrs I’ve leaned towards a dry rub. Something sweet with a touch of spice. I like a dash of an applewood rub with like a sweet and smoky rub mixed in. That’s just me.

Tuff to go wrong here. Throw a little mustard or peanut oil on them for some stick’em and apply rub. Bad Byrons Butt rub is solid for store bought. If you go the crunch route, I put apple juice and bourbon in the wrap along with brown sugar, honey, sweet Thai chili sauce, butter and peach preserves on top. Meat candy with a little heat.

Rub suggestion

Jul 21, 2020, 8:11 PM

1/2 cup brown sugar
2 tablespoons paprika
1 tablespoon smoked paprika
1 tablespoon black pepper
1 tablespoon kosher salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon mustard powder
1/4 teaspoon cayenne pepper

If you sauce at the end, we like Blue's Hog ( we get it at Ace) or Bone Suckin' sauce (Publix). Note that you should never taste Blues Hog without cooking it on your meat first. It is not a dipping BBQ sauce.

My favorite rub is a back rub. If you’re talking ribs, I season with Lawry’s seasoned salt, pepper and garlic powder. Then the last few minutes baste with bbq sauce from the Smokin Pig if I have some. If not I use a store bought sauce.

Jul 22, 2020, 7:20 AM

I like a good back rub.

flag link military_tech thumb_downthumb_up

Mostly slow cook boston butts. Start with a "spackle" that

Jul 22, 2020, 11:08 AM

has dijon mustard and parsley, with a little pepper and rosemary. Coat with the spackle, then sprinkle on the "rub". It's made up of chili pdr, garlic pdr, sugar, cocoa pdr, salt, pepper, cayenne, and rosemary. Make a home-brew sauce that's mustard, apple cider vinegar, cayenne, chili pdr, sugar, brown sugar. Works for us!

Here are the details..........

Butt Recipe.jpg(109.6 K)

Read down the first column then down the second. Very easy. Have a big slow cooker so usually do two at a time and shoot for about 8 lbs each. Takes 3 recipes to effectively cover them.

Have also done this camping in a 12 deep dutch oven. Just have to change the charcoal every hour or so. Also make sure to ring the coals on top. The coating will burn if you checkerboard the top.

The sauce is awesome and we keep it around just on general principles. Make about 3 bottles at a time doing 6x on the recipe.

Re: Favorite Rubs

Jul 22, 2020, 12:15 PM

My humble opinion, use a dry rub of anything that smells good (I like Bone Sucking Sauce or most anything by McCormick.) I don't use a liquid basting sauce at all. The slow method (cold smoking) gets you the flavor that you crave! Long and low my friend.

I have heard of restaurants that boil the ribs and then add smoke flavorings through sauce - those people should not be cooking for the rest of us.

Re: Favorite Rubs

Sugar – ¼ cup
Brown Sugar – ¼ cup
Paprika – ¼ cup
Coarse Salt – 3 Tbs
Black Pepper – 1 Tbs
Garlic Powder – 1 Tbs
Onion Powder – 1 Tbs
Chili Powder – 1 Tbs Optional
Cayenne Pepper – 1 Tbs Optional

This is easy to make. I just rub a generous amount on the ribs before smoking them.

Re: Favorite Rubs

Jul 22, 2020, 1:39 PM

I used to only mix my own rubs, however a friend recently put me on a brand called Meat Church out of TX. I have not tried them all, but the ‘Holy Cow’ is amazing and my new go to. I always like ti rub ribs down with yellow mustard them pack the rub on at least a day before. Typically I smoke naked at 275 for 45 min, place them in a foil boat, pour half a cup of apple cider over them, and drizzle with honey before wrapping and putting back on at 275 for an hour. Then crank it up to 350 and put them back on naked for 30 minutes. I usually mop them with sauce with 5 mins remaining to get a candy shell. Bug fan of sweet baby rays cut with vinegar for sauce.
