Will pot it out and freeze it tomorrow.
Hot Italian sausage, veal, lamb, ground beef.
Zucchini, carrots, eggplant, red onion, mushrooms
Rau or whatever it’s called sauce.
Crushed tomatoes, diced tomatoes, tomato sauce, tomato paste
Olives, olive juice, a little bit of sugar
Lots of love, lots of labor, and lots of time.

You cannot even taste the carrots in there but you do get the healthy nectar from the earth’s ground that I think is important.
Diced small as you can and sauté those first before anything else to reduce their size.

because I just go with it. Here's the base recipe. I'm leaving out ground beef lately and going hot Italian and ground veal.
Sicilian Gravy
2 lb. of ground beef
1 pound of sweet Italian sausage hot or sweet 3 jars of Rao’s Homemade Tomato and Basil Sauce
Brown ground beef and sausage meat in large dutch oven (6 quart)
Add tomatoes
Chop up/dice –
Mushrooms Zucchini Kalamato olives ½ jar with a little of the “juice” 1 red onion 1 baby or ½ regular eggplant Change out veggies to your taste
Saute (in some oil) until tender add oregano and garlic then add to meat and sauce
Simmer all day

1lb each ground Hot Italian sausage, ground veal, ground lamb, ground beef
Half of a small eggplant diced
One large zucchini diced
One red onion diced
16 oz mushrooms diced
Probably 8 ounces of Carrots diced. 6-10 whole carrots, medium sized
64 oz rau sauce
60 oz diced tomatoes canned
8 ounces tomato paste. Or maybe 4 oz. or 6, lol.
8 ounces of tomato sauce
Probably 2 cups of water. Maybe 1.
4-8 oz olives diced
2 oz of olive juice, neat lol
1/3 cup sugar, prolly less than that. Maybe half of that. YOLO.
Onion powder, minced onion, granulated garlic, parsley, oregeno.
An Embarrassing amount of garlic.
Brown meet then drain. Sautee veggies w/ splash of olive oil. Start with carrots and then add softer stuff. Sauté for longer than you think on higher heat then u think and keep stirring.
Add everything else.
Bring to boil stirring often.
Reduce to low temperature, cover stir periodically.
Let it roll all day long.

You can start off with just one can of crushed tomatoes, an old hamburger patty, some oregano, Parmesan cheese, olive oil, and a link of Italian sausage... after you’re done cooking you will have a vat of sghetti sauce. I don’t know what to do anymore. I just cook enough for the whole neighborhood and send out invites these days.

The recipe I’ve been able to dig out of you boys hasn’t been super specific which I appreciate because it allows for freedom.
Get it close and cook it all day and it will taste great.
