Wife hates steaks, so tonight we had.....steaks

Had a nice 3"+ thick tomahawk steak for me and oldest son to split. Things was like 3 lbs. Put a skillet on the burner on the side of the grill. Cut off the long part of the bone with a hacksaw.
Greased cast iron skillet with a little grapeseed oil and heated it to 500 degrees. Added the normal steak spices and then put a hunk of butter on the skillet along with a few sprigs of fresh rosemary and then slapped the steak down. Seared it at 500+ degrees on both sides for maybe 3-4 minutes. Then slapped it on the big grill at 450. Melted another piece of butter on top and cooked it at 450 for a few minutes, then down to 350. Put on two small thin steaks at 350 and cooked them.

Best steak I may have ever cooked, or it may have just been so long since I cooked a true steakhouse cut. Anyway, was awesome. Kicking myself for drinking bourbon beforehand, as a good cab or tuscan would have been awesome.

Me and my brother had ribeyes, the wives and kids had filets. Seasoned w HC black and cooked on the KJ. I made bearnaise, the perfect steak condiment. We had caesar salad with it, and I made beef tartare for an app.

Drank a lot of wine tonight, all of it french and all of it good, but the special one from my cellar was this 2018 Chevillon premier cru NSG. It tastes like what it would smell like at an ancient forest elf orgy, like fruit and perfume and mushrooms and damp sex.

I also mixed up a rye old fashioned with fig liqueur as the sweetener. It turned out really, really well. But it was strong. Basketball on tv, as is fitting.

Very few things are better than steak but king crab is one of those few things.
