Chicken Deli Meat

Am I just crazy or is deli-style roasted chicken a relatively new development in the world of retail grocery? Growing up, I always remember seeing Ham, Turkey, Bologna, etc. on the shelves but am seeing more and more of the processed chicken.
I feel like the first time I ever heard of this was on one of Subway's abominations.
I even saw in Publix where Boars Head does their artisan treatment of chicken deli meat.
Have I just never paid proper attention? Is sliced/shaved chicken with water added something yall grew up with?

during the summers so you could make sandwiches on the fly. You didn't stay inside the house in those days, so swinging by the house on your bike for a quick sandwich before heading back out to find trouble to get into was the order of the day. And, you got scolded if you used an entire pack for one sandwich.
