I just had to take a ride to Williamsburg county and try it for myself. Ordered 3 lbs. I gave 1 lb. to a friend and ended up eating 2 lbs. by myself yesterday.
It was good. It was the wood!
The spicy pepper vinegar sauce is addictive.

It is very good and the wood essence is the difference. The ribs are also good but the barbequed chicken is average in my opinion. Not many wood coals cookers out there now.

If you live in upstate go to Circle M on HWY 178. Friday and Saturday only. Mr. Martin learned how to cook around Kingstree. Pulled pork from the Whole pig, smoked chicken are unbelievable. Ribs are reported as good but never tried. Get the slaw!

I respectfully disagree. I've been eating Circle M for 30 years. I miss Mr. Martin, but the food is still spot on. They still have the beans and marinated slaw, but they also have green beans, mac n cheese, and sweet potatoes now, too. The pork and the ribs are delicious, and the chicken is the best in the universe, hands down.

The very best smoked pulled pork starts with a good rub and it really doesn’t need to be drowned in any particular “sauce”.
After 13 or so hours, it stands own its own merit.
This much sad, even the worst slow smoked pork I ever had was still pretty dang great. It’s a hard thing to screw up.

I grew up in Hemingway but don't get back there very often now. When I do go back, I eat at Big D's and usually get 5 lbs to bring home with me. It's great and a sure thing for me. Kenny's is a good second choice, and we held our annual class reunions there prior to COVID.
Scott's didn't exist when I was growing up and I never tried it. I hear different opinions from friends in the area. Some like it, and some don't.
Rodney Scott opened up a BBQ place in Atlanta last year, and I was really excited, until I ate there. It was terrible and maybe the worst BBQ I've ever had during my long life.
I gave my response to their website and exchanged several emails with the management. They offered me a free meal to return, but I declined. I told them that I felt lucky to survive their one meal but might not be so lucky with a second one.

I was totally obsessed with a girl from Hemingway when I was in college. Her dad owned the Ford dealership. It didn’t work out, but that’s a whole other story. I did eat at Scott’s one time passing through a few years ago. I thought the buffet was very good and the Q, though not my particular favorite style was very tasty!

I agree with the idea that smoked pork is good regardless of or even without sauce. I grew up in the Lowcountry outside Charleston and all the local BBQ was mustard based which is my favorite sauce still. When I lived in South Florida the Cuban guys I knew would cook a whole hog and they used “Mojo” sauce. You can find it in the grocery stores in the Latin foods section. It is citrus (grapefruit juice) based and has a lot of garlic. They put it on while cooking and added it afterwards just like we do BBQ sauce. I really enjoyed that and sometimes still marinate chicken in it before cooking.

And through most every small town in SC over my career and I've eaten at a lot of BBQ joints. I think Scott's is up there with the best of them. But, I still think that Carolina BBQ in New Ellenton is the best there is.

I prefer Brown's to Scott's. Brown's uses apple cider vinegar, Texas Pete, ground red and black pepper for their seasoning. Scott's uses the same basic recipe but adds something sweet that I do not care for. I moved to Kingstree in the late 70's and was smitten by Williamsburg BBQ. I grew up in Greenwood and we called hash BBQ(Hash House, Ricks's, etc)... I was taught how to cook "a BBQ" Williamsburg county style and there is one important step the commercial people leave out that is very time consuming and labor intensive but is essential to making good BBQ. That step is cooking the vinegar and pepper into the hog cavity once flipped skin side down. This takes at least 3 more hours but is sooo much better than just removing the hog from the pit, pulling the meat loose from bones and skin and then adding the vinegar and pepper.

My wife is from the Sutton's community in SE Williamsburg County and will not eat BBQ from south of the Santee River. Her Walter relatives have been known for decades for their BBQ and other.

Hey Bigun, my Williamsburg Co. hog learning was mostly by helping locals of the Salters, Millwood and Cedar Swamp communities with their wood splitting, burn barrel kicking, coal shoveling of the pit, hog flipping, seasoning/checking for and fixing leaks, removing major bones, eating and then cleaning up. Was always warned not to "take a cut" of likker until the hog was flipped....
