Im making my chicken noodle soup tonight, heres how I do it.

My wife is feeling a little under the weather, so I’m going to make a pot of my chicken noodle soup, it’s a cold-buster.
I get a rotisserie chicken from my local artisan grocer called Lowe’s, pick the meat and stick the skin and bones in a spaghetti pot. Add two quarters of chicken stock from the box, and two quarts of water. Put on the stove and let it simmer on low heat for about an hour or two, or longer.
Strain the broth, put it in the fridge and let it cool. When it’s cooled, skim off the fat and set aside.
Two carrots, two or three celery stalks, an onion, finely dice all to the same size. Peel and dice a buttload of garlic cloves & thumb of ginger. Make a bouquet garni of loads of fresh thyme, parsley stalks, and bay leaves. Sauté the veg in a big knob of butter. Salt, heavy black pepper. Add the garlic and ginger. When it’s soft, deglaze the pan with a glass of white wine. Tonight I’m drinking a Sav blanc from Bordeaux, so it’ll be that, but it really doesn’t matter what it is. Higher acid the better. Toss in the stock, the herbs, and bring to a simmer. Add the pulled chicken. Cook it down for a couple minutes, then add in a package of egg noodles. Take out the bouquet garni. Season with the juice of a lemon, add salt if needed. I add a couple dashes of fish sauce for some umami. Top with fresh chopped parsley and a drizzle of the good olive oil.
I’m serving it tonight with a big sourdough that I’ll crisp up in the oven, and mixing up a stick of softened butter with a touch of honey & some flaky salt.

Loads of people will do it that way, poach that chicken in the stock, it’s a great way and honestly if I wasn’t on a time crunch I’d make my own stock from scratch. Absolutely delicious.

Similar here, but roast the chicken in a cast iron, then deglaze the roasting pan and pour that into a Dutch with the veggies.
More times than not it’s a rotisserie chicken because of time.

But sometimes you gotta change it up and when I do, I use fideo cut spaghetti.
I also add lots of rough cut mirepoix.

for ease of use and one package is two large batches.
I'm telling you this though - stop using that boxed stock crap and use Better Than Bouillon and you will praise me later.

peasant meal taste 3% better. Chicken + carrots + stock + noodles and it tastes almost the same as this.
Helll, for $5 you can get a 4 pack of Campbell's cans and feed the family, they will like it just the same.
I'm surprised nobody here suggested smoking the chicken for 4-6 hours ahead of time.

Smoke the chicken for an hour at the lowest possible heat you can do it, then boil it to make the stock, gathering all that smoky goodness into the stock.
