But SMU's pass defense is terrible. They will load the front to stop the run if CV is not allowed to throw.

The biggest assumption you have made is that they will actually be able to run block which is not a given. As someone else pointed out, you can bet they are going to do everything to force him to throw the ball. They will stack the line to stop the run.
