Why would Will Taylor leave now....after a subpar year and a low draft pick??

Because college stats don't matter at all in the MLB Draft and a 5th round selection isn't viewed as a "low" draft pick. It has a slot value of almost $500k.

Taylor isn't as fast as he once was because of the knee injury, so won't be viewed as a Rnd 1 pick like he was coming out of high school. This is about as high as is stock will ever be, and he has no bargaining power if he comes back for his senior year and ends up being an 8th rnd pick next year. He can use his extra year of eligibility to try and drive up his signing bonus with Pittsburgh.

With the highly drafted players WF lost, it really appears they underachieved this year. Several top first round and 2nd rd players drafted including pitchers
