My mom was great at making all kinds of stuff (Italian heritage) but did not attempt fried chicken.

My Mom would spend the entire afternoon frying chicken. She would fry 4-5 pieces at a time in a skillet on the electric stovetop. Then she would make milk gravy behind it in the same pan. While the made from scratch biscuits were cooking in the oven. It’s true that you can’t rush perfection.

Same with my mother. My wife is a pickens gal and makes fried chicken as good as my mothers but doesn't make it often as "fried food is bad for you". I think its just an excuse, plus I can be a dishrag of a husband too.

Same here. My wife does not have the patience required to cook a lot of things like my Mom did. She also subscribes to the fried foods aren’t good for you thinking but sometimes I think that is just an excuse to justify not taking the time to do it. My Mom was born somewhere around the Berea area in 1925. She fried EVERYTHING.

Lard for some reason got a bad name at some point in time.
Lard is actually good for you but like everything else in moderation.

Mom's fried chicken was great. She used to make fried chicken probably once a month as a kid and did the same with making milk gravy with the bits but we always had homemade mashed potatoes.
Then about 4x a yr and my dads favorite was she would make chicken fricassee. Basically fried chicken then make a mushroom milk gravy, then put chx and gravy in a dutch oven for slow cooked for couple hrs. One of the best home cooked meals ever if you want that wholesome feel good meal.
No I am hungry!

NOLA food puts Charleston to shame IMO. I don't doubt they do good with the chicken. Couldn't find a bad spot last time I was in NOLA.

PS beignets are basically the elephant ears I used to get as a kid at the Coastal Carolina fair. They're great but not unique

Everything in NOLA is better. There is simply no better food on earth. (BBQ - they have a ton of joints in places you’ve never heard of and tourists don’t go - can be justifiably argued to a small degree - (I won’t admit this to anyone, but I found a place that does whole hog in Carolina sauce that’s as good as anything I’ve ever had in SC))
My son puts it like this: if you take a piece of lettuce from New Orleans and compare it to a piece of lettuce from anywhere else on Earth - the NOLA lettuce wins everytime……because it’s been slow basted in lard, brown sugar, cinnamon and cognac.

I'll try it. I won't lie though. The local Food Lion has me in a chokehold for their fried chicken. Probably all the MSG + spices but I could go to town on the 8 pc they sell.

Who lived in Michigan took us to 6flags in Chicago.
Said we had to stop and eat at a restaurant in Chicago Bensimon because they had the best soul food.
He asked us if i like soul for but i was young and didn't have a clue what soul. I just said yes...nervously.
The whole drive i was worried that I wouldn't like whatever the heck soul food was.
Got to the restaurant and looked at the menu.... I looked at my uncle and told him we just call this food in the low country.

well it certainly wasnt the best but I used to fry chicken when I got my first house after graduating Clemson. It wasn't any claim to fame but it wasnt bad either. The last time I fried chicken I bought one of those shake and bake things where you put the flour in the bag and then put a piece of chicken in and shake it to coat it with flour. When I shook it the bag busted and flour went everywhere. It took me almost an hour to clean it up. That was the last time I fried chicken which was about 42 years ago. LOL
