We go with the Zartarain's boil bag and a bottle of their boil stock.
4 clusters of big crab legs 2 pounds of deveined/headless skrimps 4 or 5 links of hot andouille Pound of those little red taters Pound of fresh corn A couple of yeller onions sliced in half Several lemons
This'll feed six adults and a couple of young uns.
Looking for ways to improve on this formula when we break out the big pot and burner again July 4 at the lake.

Not if you put little red taters in with skins on.
I like my shrimp with heads-on, more shrimp flavor but definitely with peel so they dont get washed out.
Also whole mushrooms are great, they soak up the boil seasoning. Another trick is to get couple cans of french green been, punch holes in cans to drain but dont open, sink the drained cans in the boil then when done just pull out and open cans, can dump all green beans in one spot, they are great.
I like using a couple yellow onions for flavor but also throw in a bag of baby whites to eat. I also add jalapeños to mine. A lot of times I will add couple pounds of crawdads too.
I got a lot of practice in this. I use the liquid Zatarans but I like the Louisiana Crab Boil seasoning better than Zats, it has little more flavor and kick.

When they start to break down they release starch into the broth which has that effect. The timing that always works for me is:
Bring the water and seasoning to a rolling boil Add potatoes and sausage and return to a boil Add corn return to boil Add shrimp and cut off the heat Dump the pot when the shrimp is pink; less than 5 minutes
By far the longest part of the process is the first step getting the water boiling hard.

My earliest recollection of Beaufort Stew, aka Lowcountry Boil, did not include potatoes. It was very basic, shrimp, sausage (usually kielbasa not andouille), and corn. Seasoned with Old Bay. When I worked at Coburg Dairy on an internship, they would pour it into a long wooden trough and feed hundreds.

if you can’t find the pouches you can tie up the seasoning in cheese cloth or get cheese cloth bags off of Amazon. The only thing that is really critical is don’t overcook the shrimp. Add the shrimp last and turn off the heat. As soon as they turn pink dump the pot.

The oldest known recipe for Low Country Boil, also known as Frogmore Stew or Beaufort Stew, doesn't have a single definitive origin, but its roots trace back to the Gullah-Geechee communities of the South Carolina and Georgia Sea Islands. These communities, descended from West African enslaved people, developed the dish as a practical and flavorful way to feed large groups using local seafood and produce.
Historical Highlights: Frogmore, a small community on St. Helena Island, South Carolina, is credited with the name. The dish was popularized in the 1960s by Richard Gay, co-owner of the Gay Fish Company. The name “Frogmore Stew” gained national attention after being featured in Gourmet Magazine in the 1980s and later on the Travel Channel in 2005. The dish likely evolved from West African and Caribbean one-pot meals, adapted to local ingredients like shrimp, corn, sausage, and potatoes. I always go with Old Bay. And several cans of PBR in the water. I prefer kielbasa simply because I don't like it overly spicy.

I’m from Charleston so we always called it lowcountry boil, but the synonyms were frogmore stew or Beaufort BOG.

We always called it Frogmore stew in South Texas. But my people out here call it Low Country boil.
But I've been corrected in an earlier poast: it is not repeat NOT a Low Country boil if it includes crab legs.
And this leaves me to suspect that both the name and the rules change depending on whose pot you're using.

I always heard Beaufort Stew when I was coming up. There was another name that I used to hear that I won’t say here but those were the only 2 things I heard it called in the 1980s around Charleston. Later I heard Frogmore stew and l never heard Lowcountry boil until the last 15-20 years. I’m guessing it is kind of like the pronunciation of the word pecan. Several local variations.

country towns many times while growing up. Never heard of it until I was in my mid/late 20s, when a buddy told me about "Frogmore Stew". Took his recipe and made it, and friends and family, who'd also never heard of it, loved it. In no time, everybody was doing "Low Country Boil".
In no way am I suggesting that I had anything to do with it's popularity, or that it hasn't been around forever; I'm just pointing out that there was a time in my life when it was not nearly as widely known or celebrated as it is now.

I lived in Beaufort for a while ( would LOVE to go back if my wife would go with me). We called it Frogmore stew named after Frogmore S.C. on St. Helena’s island. Incidentally the name has been changed to St. Helena S.C. My wife taught school there. Beautiful place.

The recipe I use is:
18 small ears of corn 2 lbs. red potatoes 4 packs kielbasa sausage 2 bags of boil in the bag rice 2 lbs. shrimp 3 bags of zatarains seasoning (used to use old bay, can’t find local anymore) Bring water with seasoning to boil, add potatoes (cut in half if large) 10 minutes later, add rice and corn 10 minutes later, add chopped up sausage and shrimp When shrimp is pink, dump pot
I know this is not true low country boil, but it is what we like as a family.
