I grew up on Johns Island. My brother and sister still live there. I get down there 8-10 times a year. It has changed A LOT since I lived there in the 60s and 70s.

I have one cook book and do most of the cooking at our home. This guy is the best.

Paul Prudhomme -Inspired Creamy Potato Soup Recipe This recipe is adapted from Paul Prudhomme's "Milwaukee Potato Soup" and focuses on creating a rich, deep flavor base. Seasoning Mix Ingredients:
1 tbsp + 1 tsp Salt 2 tsp Dry Mustard 1 tsp Onion Powder 1 tsp Garlic Powder 1 tsp White Pepper ½ tsp Cinnamon ¼ tsp Nutmeg
Main Ingredients:
8 large Potatoes (Russets or similar starchy potatoes work well) 1 ½ sticks Unsalted Butter 1 large Onion 8 slices Bacon, thinly sliced 5 cups Chicken Stock 6 cups Milk 1 cup Half and Half Optional Garnish: Shredded cheddar cheese, sour cream, chives, extra bacon bits
Instructions:
Prepare Seasoning and Vegetables: Combine the seasoning mix ingredients. Grate half the onion and enough potatoes to make about 3 cups. Dice the remaining potatoes and thinly slice the remaining onion half. Cook the Base: In a large stockpot over medium-high heat, melt one stick of butter. Add the grated potatoes and grated onions. Cook for 5-7 minutes, stirring and scraping the bottom of the pot until the mixture becomes pasty and starts to stick hard. This step builds flavor, but do not let it burn. Simmer: Add the chicken stock and bring to a boil, scraping up any stuck-on bits. Add the diced potatoes and sliced onions. Simmer until the potatoes are tender. Add Dairy and Finish: Reduce heat to low. Stir in the milk and half-and-half. Heat gently (do not boil) until the soup is hot and slightly thickened. Season with the reserved seasoning mix, salt, and pepper to taste. Serve: Ladle into bowls and add optional toppings like cooked bacon, shredded cheese, and chives.

The local men’s shelter serves Swanson turkey dinners that day. You just have to be careful with the cranberry sauce. If you already have sores inside your mouth, like I do, it comes out of the microwave hot enough to cause a third-degree burn. So be careful.

I grew up eating the BBQ from Bessinger’s Piggie Park on Highway 17 in West Ashley. Same family. Always great stuff. They had a buffet for many years but I believe the buffet went away during Covid. I remember when Maurice’s sauce was removed from store shelves. He eventually caved to the pressure and removed the flag. I buy it now in supermarkets. And I do believe like many businesses, the quality has declined in recent years. There was also a family owned BBQ place on Johns Island called Rast BBQ. I believe it may have been take out only. That was some really great BBQ.

Cheeseburger and hotdog at grandson’s playoff game against Orangeburg Wilkinson at home. Loris Lions win again 56-20 as they head up to Newberry High school next Friday staying undefeated at 12-0 on the season. Proud PAPA for sure.
