Had a northern visitor once back over my Hybotchchee (misp) grill. Apparently, it doesn't take much heat for a butt to burn.

Try to maintain dome temperature of 275 degrees +/- 25 until meat thermometer indicates around 170 degrees.Wrap in foil and put in 275 degree oven until meat thermometer indicates 203-205 degrees. Let it rest 20-30 minutes. Save any juices that have accumulated in the foil and pour over the pulled pork. Use your favorite BBQ sauce. Enjoy with a cold one while watching a Clemson victory.

cook at 225 (pit temp) until internal temps are 205. Wrap in foil, then towel/blanket and cooler it for 1 hour.

I go @ 18-20 hours at 215-225 degrees. That takes some prep work, and this is the best explanation I’ve seen for the setup. Make sure you get the fire started about an hour before you want to actually put the butt on, because you need to let it creep up to the temp you want very slowly as it’s hard to cool off an Egg b/c it’s so efficient.

I use a drip pan with water, club soda (pretty much anything unflavored) and some apple cider. I also use apple wood chips for a little extra smoke - probably a half a handful at the most, just scattered throughout the charcoal. Use good charcoal, it helps (but the Royal Oak at Wally World is fine as it’s BGE stuff, just branded different).

A temp controller helps a bunch, takes the worry out completely and you don’t even have to check it as it cooks overnight. There are tons of blowers that connect to Wi-Fi and Bluetooth so you can monitor/set with your phone. I used to use a polder that you could set ranges of temps on and it just beeped if it got too hot or cold, prompting me to adjust my vents.

Don’t worry it it goes a little higher or lower, and when you adjust the vents, do so very gradually.

Lastly, ALWAYS PACK IT. Wrap tightly in heavy duty foil and stick it in a cooler with some towels or something to take up the extra space. Let it sit at least 2 hours, and up to 4. It’s worth the wait and trouble.

Cook it at 225-250 dome temp. When you hit about 165 internal meat temp, wrap it in foil. Leave it on smoker until 200 internal temp. Pull it off, wrap it in a beach towel or two and toss it in a cooler to rest for a few hours. When you pull it out, preserve all the juices collected in the foil. After you pull the pork, pour some of the juices back over it, but first mix it with a 1/3 cup maple syrup.

Rub with salt, pepper, garlic

Cook at 250 for 8 hours. Fat side up for two hours, then turn it over.Indirect heat is good too. Enjoy! I pull all the far out for my daughter after it cools some.

Like someone said, get the bbq quru. It makes using the egg a breeze.
