Grand Funk Railroad come immediately to mind. Others that yew can remember?
ZZ Top and Grand Funk put up a Wall of Sound just pretty much from being loud, but not that complicated. Now, I would never diss the Rev. Billy Gibbons on geetar, but as he himself said, during their 50th anniversary tour, when I saw them last, "Same three guys, same three chords." Rush, even though by and large I was not a fan, put up some really complicated stuff for a three man outfit. And the fact that the drummer, Neal Peart wrote most of the lyrics is still bottling the mime.

Prince and Tom Scholz played all the instruments on their songs. they only had bands to go on tour.

moments when thinking of three man groups. I have to truthfully say, I have never listened to anything by Green Day, Muse, Hansen, or Triumph. I guess my life is not complete.
And, hard as it is to believe, I think the Kingston Trio might have been just a wee bit ahead of my time, for the most part.

Small sample size but I would go with James Gang is my favorite three man band. They could really put together a rock tune. And of course, Hendrix experience, , and Crosby stills Nash
