Starter- Castelvetrano olive, jamon iberico, 8mo manchego, with a homemade romesco. 2020 Codax Albariño.
Spatchcocked chicken roasting in the oven, serving it with charred Brussels & broccoli. The meal is just a vehicle to consume the romesco.
Romesco is a classic Spanish fisherman’s sauce. Great on fish, poultry, vegetables, bread, anything really. I make mine with fresh roasted red peppers (jar is ok), roasted roma tomatoes, raw garlic, thickened with a paste of marcona almonds and day-old bread, then seasoned with smoked paprika, Chile de arbol powder, sherry vinegar, parsley, S&P, and a good glug of your best olive oil.

It was so warm today I stopped and grabbed a hothouse tomato and some Ingles deli cheese bread to add to some hydroponic romaine and thick sliced apple smoked bacon for the first BLT of spring.
Since APM is Lent (to whom and for how long? $1 to my Episcopalian friend) I had to go with my own judgment and wash it down with Mamma’s Little Pils instead of consulting him on a proper German thirst quencher

I made some fried catfish I caught at the lake w green beans and long grain rice.

Indeed it is. I’ve been an apartment-dwelling UDP plebe since moving here, but it does at least have granite.
