So with the holiday coming I always like to dry rub a few slabs, slow cook em and then throw em on the grill to finish.
Anyone got any good recipes, tips/rub recipes.?
Favorite kind of BBQ sauce to use?

I always start by rubbing my tips, but the trick is to grill them slow, then fast

First, remove the rubbery membrane. Rub with fajita seasoning. Cook for a three hours in the oven covered at 400 degrees. In the pan add about a quarter inch of water and 1/2 cup of liquid smoke. You can do this the night before and just refrigerate.
I then cut mine up in a two rib bundle, cover with my favorite BBQ sauce and heat up until hot and good color on the grill. Best ribs ever.

First the rub paprika, cayenne pepper (careful with the cayenne), fresh slightly crushed black pepper, brown sugar, fresh garlic, a little salt and a little fresh ground coffee and maybe some other peppers or items in my spice drawer. Hot is good, it won't be as hot after a few hours of cooking.
Slow cook indirect heat charcoal grill with apple wood chunks in the coals. About 4 hours or so on a rib stand. Last 1/2 hour gets BBQ sauce and no more adding wood chunks. Make sure to remove the membrane. I'll mop the ribs during cooking after an hour or so with apple juice with some of the rub mixed in and water and a little olive oil.
I like apple wood. Mesquite and hickory just aren't as good. Cherry wood is good too. All rubs are good, I'm never too worried about measuring, but I've got some written down. You can google rubs they are all similar.
Slow cook, don't let them get dry, patience and attendance.

I've tried a lot of recipes, but this nails it. 6 hours total, but you won't regret. Baby backs work best.

ribs. If you want a lot, don't foil them at all. If you want medium, foil after 3 hours of smoking, then remove after 2 hours in the foil, let them finish 1 hour. If you want tender or little bark, foil after 3 hours and leave foiled the next year hours until they're done.
The way you can tell they're done without ever having to use a thermometer is the 90 degree trick. If you hold up one side of the ribs and when the slab falls and makes a 90 degree angle, if the meat starts to crack and pull away from the bones, they're done.
