Gluten Intolerance?

Does anyone have gluten-intolerance? What was your original symptoms? What is your diet like? Not sure this is what I have but I tend to have a full feeling after eating bread and pasta, plus stomach rumbling. Even some brain fog and fatigue after meals. Originally went to doc for pain in center of upper abdomen, had scans and blood work, but all good, so said acid reflux. Thought brain fog was related to COVID. Was good for about three weeks then had a day where I ate a lot of gluten; birthday cake, cheeseburgers, you know, the good stuff. Just came back suddenly.

Fully resolved when I went gf. I’ve relaxed and will eat bread and have pizza on occasion now with no issues. Also discovered that tomatoes have become problematic, and dairy now gives me the brain fog you describe as well as headache and nausea on occasion.

I find I don’t miss the food much that made me feel bad

Gluten heavy meals are pretty much guaranteed to give me intense “food comas,” which feel like intense feelings of fatigue and severe brain fog. If I have pizza for lunch the rest of my day is fuugggggeeed.

Also, have the sheets for about 8 hours instead of my normal schedule. It’s worth it for dinner sometimes. The lethargic feeling is bad enough to make me stay away most of the time. Homemade pasta and fresh flour tortillas are my weakness, I’ll do some serious damage to myself every so often on pasta/taco nights at the house.

Its all cost/benefit analysis for me. I know I feel bad afterwards, but it’s so #### good and makes me so happy for a little bit I don’t eliminate gluten.

She was finally diagnosed as being celiac. Doc said that a much larger percentage of the population that you think has some level of gluten intolerance, but being a true celiac is a very rare thing. We've had to change how we eat on every level...what we buy, how we prepare it, and how we clean up after. And eating out has become a very rare thing because Mrs. worries about cross-contamination in restaurant kitchens. The pandemic lockdown came at a great time for her in that respect, as we were always home to deal with the new methodology for meal prep. That said, her issues were pretty severe. It sounds like you have an intolerance but can still consume at least some level of gluten without dire consequences.

It's sad that we live in this new woke society...back in the day we just shipped 'those people' off to a Gluten Colony to live out their days. Now it's frowned upon.

not even sure what it is, but I HAVE to have bread or pasta or rice with every meal or I feel sad and depressed. I made myself some jelly toast for supper last night. I love spaghetti. I love pizza. I love sandwiches.

Help....I am hopelessly addicted. Even heroin addicts don't need it 3 times a day.

Hopefully I qualify for some sort of disability and/or rehab?

I will say that the gluten-free pastas are really good.

Maybe even better than the wheat pasta. But there is no gluten-free bread that is good. NONE. It's all horrendous except for cornbread. Rice is gluten-free though. I still keep bread on hand for myself, as well as a stash of gluteny things I love when Mrs. and I aren't eating together.
