Put it on at 3:30am. Was done by 6:30pm. Not a single tough spot when pulling it either. Went half Maurices, half McCabes red pepper/vinegar. Ate the Maurices on a sammich and the McCabes straight. Think I figured out a trick. The Traeger runs low from the temp you set. So if you set it at 225, the temp will fluctuate between 229 and 212. Set it at 250 and it runs 230-255. I set this one to run at 250 for the first 2 hours, then 225 until it hit the stall at 160. Then when it got to 165 I pulled it, wrapped it, and put it back on at 225. 2 hours later, went to 250 and kept it there until done. Pulled it off at 201 degrees and let it rest wrapped in a cooler for an hour.

Anyway, think I will start using 250 for periods while cooking because that's a 235-240 average temp. 225 is a 215 average temp. Still think 250 the entire time would be counterproductive. They need a 235 true average temp and I'd leave it there.

I don’t have a Traeger, I have Green egg and a couple Weber kettles.
Pork is forgiving enough to cook at 250. Temp at the grate is Probably 235-240. Perfect
Mmmm pulled pork good…..

Well, I always heard 225. Set it to 225. Took forever and realized

the average isn't 225 when set there. I know it's impossible to maintain a steady temp in a Traeger, but the setting should be an average. Might as well change the knob to 215 and 235 instead of 225 and 250.

Work from home. Plus it's a pellet smoker.

Woke up at 3am. Was on the smoker by 3:30am. Went back to sleep. Woke up at 6am. Applied first spray, takes 30 seconds. Spray every hour or so until it reaches the stall at 165 degrees (around 7 hours). Then spend maybe 10 minutes or so wrapping it and putting it back on. Reinsert the thermometer. Then I only check it every couple of hours until it reaches 201, where I took it off and tossed it in a cooler.

Total time messing with everything was less than an hour. I still worked 10 hours yesterday too. Can't do it tonight, or probably any other day this week due to other stuff, like being on the road, cub scouts, etc.

despite nearly a decade of mockery for outdoor crock pots

but a Traeger is looking nice given how little time I have to smoke meats w/ the kiddos.

For the same reason. I mean if I'm retired, maybe I'll go old school. But it allows you to get a decent smoked butt with minimal babysitting and time.
