Gaytors can be very destructive. I remember a pond draining in the small community I grew up in, when I was very young. It was a very good sized fish pond, but a gator had gotten in it, and was disrupting everything. So, they drained the pond to isolate and find the gator, and lemonate him. Yes, not relocate, eradicate. This was in the early 60's.
The gator turned out not to be easy to kill. As I remember, it took several shots from a high powered rifle (a small caliber 223) to do the trick. The adults skinned the gator on a picnic table next to the pond. It was a good sized one, well over six feet, I remember it hanging off both ends of the table. We were given a little of the meat, and my mom fried it up. I vaguely remember it DID taste kind of like chicken.

I think that at one time the 223 was use as a snipper weapon until it was learned that a slight wind could cause the projectile to travel way of target bc it was to light. But on a calm day it was pinpoint on target...

We've eaten gator meat (legally) on occasion. Surprisingly, different cuts on a larger gator taste different and have a different texture just like on a cow or pig. The best is the loin (upper meat of the tail). Grilled gator has the texture of chicken, but the taste somewhere between chicken and fish IMHO.

The taste of gator meat can vary and is dependent on a few variables. Their access to different fish and sustenance variety can make a difference in their taste. The size can make a difference as well. Similar to a smaller, younger doe tastes different than a mature buck in the deer species. Time of death in relation to processing can also drastically change the taste. Killing a gator then taking him to the processor to get hung in cooler, vs killing him at the processor produces a different tasting meat. Although, most processors prefer the gator dead before you arrive. HaHa.
As for this weekend, we aren't looking to fill our freezers. We are looking for gator skin boots and belts to wear to Omaha!! So, it doesn't matter when we kill them as long as it's this weekend.
