Clemson Nutrition Program...

In this day in age with folks looking to get an edge on the competition wherever possible, I was thinking about what is going in to Clemson's players bodies. We have a crazy nice facility with what I'm assuming is an incredible kitchen. Who is the person cooking the food and coming up with daily menu's for the football team?

Everyone wants to talk about strength and conditioning programs...what about the nutrition program? Are these things one in the same? Does our strength and conditioning program write menus for breakfast lunch and dinner?

I bring this up after seeing that our guys ate 500 pounds of meat or whatever it is that they consumed just days before the game. Is that such a smart thing to be gorging out on that much food before going to participate in a high level athletic event. Just curious?

It seems like every time I see a video of our guys eating at the facility there is a bunch of fried food and just overall really unhealthy stuff on the plates. Do other schools do this?

Does the football team use Aramark as its distributor? What kind of quality is that?

Does Clemson's need to invest more in a more knowledgeable Chef that can come up with and execute a more healthy menu?

We have nutritionists who plan the meals for all of our players. Go find the Clemson VLOG on YouTube and you can see it documented in great detail.

dressing to me if you really read what the nutrition program website says. Doesn't really give details...just bullet points. It also doesn't really say who the nutrition experts are and what their qualifications are. Imagine if the strength and conditioning website read like this...

Looks like the person managing the kitchen at the football operations facility doesn't even require a culinary degree much less any knowledge of nutrition. This position is hired by Aramark. I'm sure they are required to use pretty low quality food. Anyone with knowledge of Aramark knows that their quality is among the lowest of all food distributors. Sysco and US Foods aren't great but they are definitely better than Aramark.

This is an active job opening for kitchen manager of the football complex.

Job description is as follows:

*Train and manage kitchen personnel and supervise/coordinate all related culinary activities
*Estimate food consumption and requisition or purchase food
*Select and develop recipes as well as standardize production recipes to ensure consistent quality
*Establish presentation technique and quality standards, and plan and price menus
*Ensure proper equipment operation/maintenance and ensure proper safety and sanitation in kitchen
*Oversee special catering events and may also offer culinary instruction and/or demonstrates culinary techniques

And just to add...this position does not even require a culinary degree or post high school education. Kitchen experience seems to be the #1 qualification.

Again...I'm just asking questions. This seems like a pretty important position.

Sysco and US FOODS are vendors for food distribution. Aramark is a global food service provider. So you can’t compare them. But you can compare Aramark to Marriott and Compass food services.

He is not qualified to write and execute menus. It is also not his job. He probably has a pretty good understanding of nutrition but that is not his expertise. He is a strength and conditioning coach, not a chef/nutritionist. What I'm talking about is a completely different position...or atleast it should be. In my opininon, maybe one of the most important people in the building.

I assure you: Meat consumption is not a problem (unless it was 500 lbs of bacon).
The guys are on a nutrition plan throughout the year, dependent on what the goal for that player. Look at Page. He came severely overweight and is now stronger and at a much healthier playing weight.
The players have some responsibility in this. The coaches can’t hold their hands while on home visits if they choose to eat 2 pizzas and a pound of M&M’s.

Please read my above post. I'm not hating on meat consumption and I am aware of what the page on the nutrition program says. It just doesn't really go into much detail and doesnt give any information on the people that lead the "nutrition program" and what their qualifications may be. Also is this different from the every day food that is being eaten?

Does Aramark control most of this? I know we have people that put together the protein powder and other supplements that the players take...but what about the day to day food. Who is writing these menus and who is cooking the food? We are pumping tons of money in to the program and if we aren't paying someone 6 figures to do this then we don't have a qualified person. This is not an easy thing to execute and it requires a pretty specialized person to do it.

nutrition. It's all specialized and tailored to the individuals' diet. We have dietitians, nutritionists and on and on. The infrastructure has nothing to do with any issues. What the players do away from the program is relevant, but as for the teams intake, it's top notch, state of the art...

any information on who these nutritionists and dietitians are. And again...we are tied to Aramark so what kind of control do they actually have. I have seen many of the players plates on the Vlog and it doesn't look like the most healthy stuff.

And I'm not just talking about the protein powder and supplements that the players are taking. I'm talking about the person that is managing the kitchen that the players eat at every day.

Just did a quick google search and it looks like we are hiring a kitchen manager for the football complex and the qualifications are less than spectacular.

My daughter is a Nutrition major and just returned from the Orange Bowl where she was one of the 4 students who traveled to assist the 3 salaried Nutrition Staff that manage their portion of the Reeves Complex. There is a different staff for the kitchen and a different staff for strength and conditioning. If you are serious about wanting details on this, send me your questions and I will have my daughter fill you in.

It seems that would go hand in hand but it is hard to find information about it.

Does Aramark control everything? I know that Clemson University has an exclusive contract with them which is really limiting in terms of what products you can get.

Do our players eat organic?

I was just jumping on the wagon of evaluating everything and this question just popped in my head.

are monitored based the nutrition provided. They walk up, tell them their name and they get what's next on their plan, according to the videos I've seen following the players.

No, they do not work hand in hand as much as people would think, although I understand why many would think that they would. The nutrition staff is focused on player health and nutrition. They handle pre and post practice weigh ins early in the year and become hydration buddies for those that need more water. [This is different from the trainers providing water for performance, yet another department.] Nutrition monitors body fat and muscle mass. They make and provide the workout smoothies, so their shifts begin at 5 AM regularly. They provide snacks throughout the day PB&J, health bars, Cherry Bundi, etc. Nutrition covers in game foods and post game/practice grab and go provided by local restaurants. An example is CFA grab and go for a player is usually sandwich, grilled sandwich, fruit cup, mac and cheese, strips and a cookie. This was intended for post Orange Bowl, but the CFA partially broke the deal and only had 1 sandwich per meal. The head of nutrition is a degreed Dietician named Paul. Kitchen staff prepares meals. I don't know much about them. Head is currently Chef Manny. This is not the same Chef as the Wilkins video many are referencing.

Aramark has little to do with the Reeves Center in regards to nutrition. My daughter regularly makes grocery store runs for Juicy Juice, bread, etc. Sometimes she sends pics of multple grocery carts. The dietician detemrines which chews and snacks are provided, like Drip Drop water supplement or Fair Life milk as opposed to other brands.

Each player does have different dietary needs. All nutrition is aware of allergies and preferences. As an examples, for those needing to gain weight, ice cream is added to the smoothie. Other fruit is detemrined by what they like.

Most of our players are extremely polite and good guys. Mid year Vic B and Khalil B have been very interested and engaging. Nutrition works hard for all of our guys but it is more fun when they feel appreciated.

The nutritionist spoke at the 2018 ladies clinic about how they tailor the players' diets to their specific body types and roles. While I was quite impressed with the presentation (and Wilkins and crew making omelets on portable burners in the coliseum) I still think our boys need to drink more milk!

enough Chef's to know that their products are sub par. It may be ok for the average joe to eat, but when you are talking about food going into the body of an athlete that a school and its alumni/boosters are investing 100's of thousands of dollars into then it may be pretty important.

We evaluate coaches jobs all the time. Why would this not be worth talking about.

That institutional food service providers don’t provide the same quality of food to every one of their customers. I’m comfortable in my belief that those in charge of fueling our athletes have everything under control.
