#3 - Gamecock Chicken Recipe for Wednesday

Gamecock Chicken Perlo (PER-low), also known as Chicken Pilau.

PS - this is not Chicken BOG.


Ingredients
=====================================.

1 large chicken
5 cups water*
4 stalks celery
1/2 onion
1 bell pepper
4 teaspoons salt, divided
1 teaspoon black pepper
1 teaspoon onion powder
3/4 teaspoon paprika
3/4 teaspoon red pepper flakes
2 cups uncooked long grained rice
1 pound smoked sausage (or un-cooked link sausage)


Directions
=====================================.

In large pot, Add chicken neck, water (* = enough to cover chicken, veggies), 2 stalks celery, 1/2 bell pepper, 3 teaspoons of salt and next four ingredients. Bring to a slow simmer for 1 hour.

Remove chicken from liquid/stock, then strain (to remove solids, veggies) and return 4 cups liquid/stock to the large pot.

Remove skin, bones, etc., cut chicken into bite sized pieces and add to the large pot.

Dice 2 stalks celery, 1/2 bell pepper, and 1/2 onion; add with the remaining salt and the uncooked rice into the large pot.

NOTE (Adding your favorite hot sauce (to taste) is an option at this point)

Slice sausage bite-sized pieces into the large pot.

Bring contents to a boil; reduce heat to medium-low and cover tightly. Cook for 20 minutes, stirring occasionally.

Remove from heat and let sit for 15 minutes or so.

You can call it whatever fancy lowcountry word you want but that there is chickenbog with sausage and it is d@mn good.
