1 large chicken 5 cups water* 4 stalks celery 1/2 onion 1 bell pepper 4 teaspoons salt, divided 1 teaspoon black pepper 1 teaspoon onion powder 3/4 teaspoon paprika 3/4 teaspoon red pepper flakes 2 cups uncooked long grained rice 1 pound smoked sausage (or un-cooked link sausage)

In large pot, Add chicken neck, water (* = enough to cover chicken, veggies), 2 stalks celery, 1/2 bell pepper, 3 teaspoons of salt and next four ingredients. Bring to a slow simmer for 1 hour.
Remove chicken from liquid/stock, then strain (to remove solids, veggies) and return 4 cups liquid/stock to the large pot.
Remove skin, bones, etc., cut chicken into bite sized pieces and add to the large pot.
Dice 2 stalks celery, 1/2 bell pepper, and 1/2 onion; add with the remaining salt and the uncooked rice into the large pot.
NOTE (Adding your favorite hot sauce (to taste) is an option at this point)
Slice sausage bite-sized pieces into the large pot.
Bring contents to a boil; reduce heat to medium-low and cover tightly. Cook for 20 minutes, stirring occasionally.
Remove from heat and let sit for 15 minutes or so.
