I figured potatoes would grow anywhere. I have several growing in a pile of dirty laundry that has been sitting in the garage for too long.

I'd say dirt and altitude/climate. Potatoes originated in the Andes. Mrs Gumby is from Idaho, so I know more about Idaho than anyone should be forced to know. ??
