Tenderloin. I've settled on 137 degrees as the moneyshot temperature. Marinated in dijon, honey, soy sauce, garlic, thyme, and rosemary, which all sounds a little weird together, but it worked like a champ.

Patted dry out of sous vide bag, did 30-45 seconds per side

on sear burner (right chere)
Then brushed on the rest of the marinade and grilled over standard burner for a minute per side. I think the sear burner would have scorched the honey and garlic, if not more. Sumbitch gets up to 1,100 degrees or so.
